This Week's Recipe--Cheeseburger Cups

Cheeseburger Cups
I know the name of this recipe is odd, but I didn't name it! At our house we called them 'Cheeseburger Cupcakes' which is no less strange I admit, but anything with 'cupcakes' in the name is *much* more likely to be liked by my little ladies. Who eats muffins for breakfast? Not us! We eat breakfast cupcakes!

Anyway...on to the recipe!

Ingredients

  • 1 pound ground beef
  • 1/2 cup ketchup
  • 2 tablespoons brown sugar
  • 1 tablespoon prepared mustard
  • 1-1/2 teaspoons Worcestershire sauce
  • 1 tube (12 ounces) refrigerated buttermilk biscuits
  • 1/2 cup cubed process cheese (Velveeta)

Directions

  • In a large skillet, cook beef over medium heat until no longer pink; drain. Stir in the ketchup, brown sugar, mustard and Worcestershire sauce. Remove from the heat; set aside.
  • Press each biscuit onto the bottom and up the sides of a greased muffin cup. Spoon beef mixture into cups; top with cheese cubes. Bake at 400° for 14-16 minutes or until golden brown. Yield: 5 servings.

I used grated cheddar instead of Velveeta.

The Verdict
Creepy recipe name, but YUMMY! Scott liked them and the girls ate them too! I had the girls help me roll the biscuits out flat before we put them into the muffin tin and then sprinkle the cheese on top after I spooned the meat in. They like to be involved in the cooking and it ups the likelihood that they'll like dinner. It worked today! A definite 'do over' for our family!

**update 6/5/10**
To make breakfast cups whip 5 or 6 eggs with a splash of milk and pour into the cups, on top of the rolled out biscuits. Top with ham, bacon, diced peppers, cheese, etc. Bake as directed above, checking eggs for doneness (they should be set in the middle, not liquid) before removing them from the oven. YUM!!

  3. I think they turned out great! Very yummy! Brinley loved them too! I didn't let her help this time because I wasn't feeling very well, but I will let her next time. It takes a lot longer when she helps! Mine were done after 12 minutes and they were very brown by then! Strange! Did yours make 8 cupcakes?

  4. My thingie of refrigerated biscuits had 10 biscuits, so I got 10 cupcakes out of mine and didn’t have any leftover meat. My oven here is absolutely the cheapest available, so it takes forever to get hot and cooking times aren’t very consistent. I’m glad you guys liked them, though! Anything you can eat without silverware is a hit here! :-)
